COLLAGEN EDIBLE CASINGS
PRODUCT DESCRIPTION
Collagen casings are tubular artificial casings produced from collagen protein obtained from hides of bovine origin. It is used for the production of cooked meat products, smoked or not, but they can also be used to produce dry•fermented products and other non•meat products like vegetable sausages, cheese, corn, etc.

Recommended period of use is 2 years from delivery date. This is not a shelf life when stored properly, closed in original packaging, these casings can be safely used beyond the mentioned period.

LUTEN FREE DECLARATION
We, hereby, confirm you that our casings do not contain gluten. Furthermore, gluten, as well as other compounds, is a known allergen under European Regulation and none of those makes part of collagen casings and as a consequence do not require any special labeling.

SHELF LIFE INTERPRETATION
The period of two years we are giving to the casing as shelf life does not exactly have the same meaning of the expiry date used for food products. Our two years period time is the recommended period of use because of technological and application reasons. Depending on the storage conditions at the end of that period the properties of the casings might have changed or not. And in any case we do recommend to use the casing before that period. But if at the end of that period we double check the casing and they still perform in accordance to our application and stuffing requirements we may extend the self•life. Despite the two years period of recommended use we know you can use casings that are 4, 5 or 10 years old without a substantial loss of properties. Furthermore, the use of the casings after two years does not represents any health risk or a deterioration of the organoleptic or nutritional properties provided they have been properly packed and kept in good warehousing conditions. And this is what makes a significant difference with the concept of shelf•life applied to food products. In the case of food products after the expiration date you can expect a loss of nutritional or organoleptic properties of the goods or a deterioration of them that could represent a health risk.
